• 2 slices of bread
• 2 tablespoons butter
• 2 large eggs
The key to success for any good recipe is to always use the freshest ingredients.
Take a thick slice of your favorite bread, cut a round hole in the middle using a 2 inch round cutting ring, cocktail jigger, or small drinking glass. Save the small cutout piece. Coat both sides of the bread with butter (including the cutout), then add the slice of bread to the pan (along with the bread circle you cut out) and let them toast on one side for a minute or two, then turn over and add 1 large egg to the hole in the bread. Cover the pan and let the egg cook for 2 minutes, then with a spatula, carefully turn over the toast and egg in one piece. Cook for another minute or until the egg is done. (Be careful not to burn the bottom of the toast!)
Serve while hot with grated cheese on top, lemon or orange zest, with a side of bacon or Italian sausage.
