• 3 medium white onions, sliced
• 2 ounces (1/2 stick) butter
• 2 ounces (4 Tbl) extra virgin olive oil
• 1 teaspoon salt
• Fresh ground black pepper to taste

Slice off both ends of onion
Continue to stir every 10 minutes for the next 20 minutes. Turn heat up slightly for the last 10 minutes, then season with salt and a little fresh pepper. Caramelized onions should be done after 1 hour
Note: For even more caramelization, cook the onions for an additional 30 minutes over medium-low heat, stirring occasionally.
