A Little of This ~ a Little of That
Many Italian cooks don’t follow a recipe, but know what flavors they’re looking for in a dish, and have a natural, intuitive ability to make adjustments along the way as needed. For the rest of us, we need more of an exact science to prepare a dish: A detailed recipe with specific ingredient amounts and cooking instructions. One of the challenges is taking ambiguous recipes and turning them into reproducible results. Other challenges included narrowing the myriad delicious recipes down to the top 100 that offer the best flavors, cooking convenience, and are widely accepted throughout Italy, despite the significant regional differences.
When it comes to Italian cooking, there’s no shortage of opinions
If you take a survey among Italians on how to prepare a particular dish, there is seldom a consensus. People across the 20 regions of Italy will have well over 20 different ways to make the same authentic Italian dish: Add oregano, NEVER add oregano; use olive oil not butter, use butter not olive oil; use only lard; add a pinch of sugar, never use sugar; cream or no cream; add carrots, never add carrots; add nutmeg, no nutmeg; onions, never onions; add ketchup, Never add ketchup; anchovies, no anchovies; add red pepper flakes, no red pepper flakes; drop in a bay leaf, never add bay leaves; cook for less than an hour, it must cook all day – the list goes on and on.
Grandma Wasn’t Always Right
While almost every Italian has a grandma that always made the best Italian food, it was our job to determine whose grandma actually delivered on that flavorful promise – and without taking all day to make it. So while one person’s grandma makes an authentic Italian dish in Bari, it will often look (and taste) very different from the same dish made by someone else’s grandma in Florence.
Since all Italian grandmas can’t be right, we decided to review and test more than 2,000 recipes to determine the best in Italian cuisine for ourselves, taking into account easily accessible and fresh ingredients, and convenience of preparation and cooking time.
As part of this process, we consulted with many Italian and American chefs, researched a seemingly endless array of traditional Italian recipes, and carefully reviewed the myriad nuances between Italy’s 20 different regions. Through our test kitchen, we have been able to develop, document, and provide you with 100 delicious recipes for the most popular Italian dishes you can easily make at home – flavorful gourmet meals you won’t soon forget!
We’ve researched thousands of the best Italian recipes and taken more than 12,000 photographs to document our results in an effort to deliver the most delicious, authentic Italian cuisine you can easily make at home.
Never Trust a Skinny Chef
The old adage never trust a skinny chef may not have merit after all when it comes to eating Italian food. A recent survey of more than 23,000 people has concluded that eating pasta is not fattening and actually decreases the chances of becoming obese. George Pounis, the IRCCS Neuromed study’s lead author, said: “We have seen that consumption of pasta, contrary to what many think, is not associated with an increase in body weight, rather the opposite.”
“Our data shows that enjoying pasta according to individuals’ needs contributes to a healthy body mass index, lower waist circumference and better waist-hip ratio.” “The message emerging from this study, is that Mediterranean diet, consumed in moderation and respecting the variety of all its elements, is good to your health.”
